The new luxury retreat opening beside one of NSW’s most beautiful regional restaurants

We’re calling this, this new stylish countryside retreat is going to become ‘the’ place to be this spring.

Since Saddles Mount White opened its doors in 2018 to The Homestead at Saddles, it has become one of New South Wales’ most beloved destination dining spots.

Saddles is an easy 45-minute drive from Sydney, located on a sprawling 25 acres in Mount White, where the bushland meets the waterways of the Hawkesbury.

After eight successful years impressing diners, Saddles Mount White is welcoming a new chapter: The Grand Saddles Lodge. The new lodge will introduce 20 private villas to the property as well as a new restaurant, piano bar and spa, making it a destination where guests can come to dine, stay and unwind among nature.

Conceived by entrepreneur John Singleton and designed by Michelle Leslie alongside White + Dickson Architects, The Lodge reflects Singleton’s lifelong appreciation for hospitality and his deep connection to the Central Coast. Interiors are rich in colour and texture, featuring sandstone, spotted gum, warm brass and locally crafted furnishings.

Hidden among the trees, The Lodge’s villas have been conceived as peaceful retreats showcasing the work of local craftspeople and artists from the Central Coast. Each villa features separate living spaces, an open fireplace, private terrace and plunge pool, while a communal infinity pool and pool bar overlook the surrounding bushland. Native birdsong replaces the sounds of the city, inviting guests to settle into a gentler rhythm.

Located within the main building at The Lodge, the brand new restaurant – its name is yet to be revealed – will showcase the best of Australian produce. Details around The Lodge’s dining offering are being kept under wraps for now, but the menu will celebrate local seafood, alongside premium organic beef and poultry, while the on-site herb and vegetable gardens will inform the restaurant’s seasonal, produce-led approach.

Singleton is not doing anything in halves at The Lodge. Not only will it welcome a new restaurant, it will also open Ned’s, an intimate Art Deco-inspired piano bar, where classic cocktails, live jazz and warm hospitality come together. The cosy space will be anchored by a grand piano and will be the perfect spot for a nightcap.

Completing The Lodge’s all-encompassing offering is The Spa. With five treatment rooms, traditional infrared saunas, ice baths and Australian treatments, guests will be able to fully decompress and de-stress throughout their stay.  Check us in, stat.
